Pickling for Powell's

We are reasonably well known now for our gins, our bakes and our preserves. At Wych's Brew we have been focusing on these for 4-5 years and have honed our processes. We understand that things need to be just right as customers expect a certain level of quality. They definitely want good flavours.


At the end of 2024 we were given the opportunity by our good friends at Powell's Pies to produce their pickled shallots. This is not an assignment to be taken lightly. Powell's pride themselves on their own recipe for sweet pickled shallots (not pickled onions!) and have a very loyal set of customers who love the product and want the same thing time and time again.


Learning the process is fairly straightforward. It is a matter of preparing and salting the English shallots (a laborious process and the most time-consuming part), sterilising the jars, preparing the vinegar mix (a secret recipe) and then putting it all together. However, to get it right needs an attention to detail and a good understanding of what the customers like, what Powell's expect as a level of quality, and how to create a consistently high standard of product. Powell's shift a lot of jars per year so it is important to maintain a level of excellence.


So we have been learning, adapting and fine-tuning where necessary and we hope that customers are enjoying the same great pickled shallots that they expect. They may not have Wych's Brew on the label, but they have our care and attention and we are proud to make them for Powell's Pies.
